“I have entered cakes in county fairs for years. But it was when I was taking a cake decorating class and the teacher was ooing and ahing about a cake I had decorated that got me thinking about going into the business. She said to me, ‘why are you wasting money, that you could be making, decorating cakes.’ My thoughts were, why am I?” Nancy Colistro said Wednesday afternoon, December 8 at the ribbon cutting with Morrison Chamber of Commerce members for her newly opened business.

So the process began the middle of October of trying to find a place for the business, supplies and to be open by December 1. “We went from conception to ending in six weeks,” stated Colistro.

The Cake Shop opened its doors on December 1. It is located at 221 West Main Street. Like an old time cake and candy shop, you can find a wide variety of baked goods. Purchases can be made from their display case which houses homemade truffles, hand dipped turtles, wedding mints, blue ribbon brownies, decorated sugar cookies, fancy cup cakes, chocolate dipped strawberries and assorted goodies. Cinnamon rolls are baked fresh daily and piled high with homemade cream cheese frosting. Specialty cakes can be ordered for any occasion. A two-day notice on cake orders is appreciated. Forget someone’s birthday or a special event? They have “Baby Cakes” which are smaller cakes that are displayed in the case and ready to go at any moment.

Three generations make up The Cake Shop. Nancy, owner, her mother Judith Buller and Nancy’s two daughters Kelsey and Brittany are all “a piece” of The Cake Shop. A fourth generation asset to the business is Nancy’s grandmother, Ruth Richard. “We use quite a few of my grandmother’s recipes,” shared Nancy.

Nancy also stated, “ We want to make the people of the community happy. We listen to what they want or would like to see in our shop. The cinnamon rolls were going to be a side item but people wanted cinnamon rolls. Now they are one of our best sellers.

The Cake Shop’s hours are Monday through Saturday 8 a.m. until 6 p.m. The phone number is (815) 772-9951.

Those present for the ribbon cutting were: RoAnn Porter, Chamber executive secretary; Bob Vaughn, Chamber president; Nancy Colistro, owner; Kelsey Colistro, daughter; Judith Buller, mother; Brittany Kennell, daughter; Sandy Prescott, Alice Senior, and John Miller, Chamber members.
